Day 360: Rainbow Lollipop Cupcakes




This is the finished product. They are vanilla cupcakes with musk buttercream, flavoured with pastel colours and topped with a fondant lollipop. A lot of effort went into them but the cuteness was worth it.

  1. I love the colourful buttercream swirl the best - it reminds me of a Rainbow Paddle Pop. How did you tint and mix the various colours, without it becoming a grey mess? (if you don't mind sharing!!)

  2. Hi Louise! I used to love rainbow Paddlepops when I was a kid.

    I should have taken a photo of the piping bag to show everyone how it mixed. What I did was make the buttercream, separate it into 4 bowls and colour it in similar shades to the cake mix. I then put a spoonful of each colour into the piping bag and tried to sort of layer them side by side so that when you push down on the piping bag it gets a little of each colour. None of them are even, but I wasn't sure how else to do it. I should have done my research better!

    Thanks for the tip about the buttercream! I am making some cupcakes for a friend's going away party soon and I think I might try these! I wouldn't worry about them not being even - they look fantastic!
